In honor of St. Patrick’s Day and National Nutrition Month, this March why not “green” your plate? Noted for their health benefits, even the government is urging all of us to eat more dark green vegetables. This month, we review the top dark greens and give you ideas on how to “rabbitize” your diet.

Other than being green, kiwifruit and celery don’t appear to have much in common. But, both are an excellent source of fiber, one of a few key nutrients identified in the 2010 Dietary Guidelines for Americans as being under consumed by most Americans. Kiwifruit adds color to a fruit salad or yogurt; celery is a great soup starter or a low-calorie snack when served raw or with hummus. Puts new meaning to the expression, “It’s good to be green”.
