Ingredients:
3 eggs (separated)
1 teaspoon vanilla
¾ cup milk
¾ cup low-fat sour cream
2 teaspoons baking powder
½ teaspoon baking soda
1½ cups flour
½ teaspoon salt
½ cup melted butter
Raspberries, blackberries, blueberries, strawberries
Lemon
Maple Syrup
Instructions
Wash and pat dry fruit. Remove any stems or crushed berries. Cut strawberries. Place berries in a bowl and sprinkle with juice from half a lemon.
Beat egg yolks in a large bowl. Beat in vanilla, milk, sour cream and melted butter. Combine dry ingredients in a bowl. Sift into egg mixture and beat well. Beat egg whites in a separate bowl until stiff. Carefully fold egg whites into batter. Pour batter into waffle iron and bake. Caution: Do not overmix the batter.
Note: Do not over fill the waffle iron with batter as it will leak over the sides. To ensure crispy waffles, do not open up waffle iron during first minute of cooking.
Serve with fruit and syrup and enjoy!
